Rougié

We proudly feature ‘Rougié’ foie gras and duck products. For over a century Rougié has pioneered the foie gras industry, leading the development of new production methods, including the I.Q.F. (instant quick freeze) process.  For over a year now we have sold exclusively the I.Q.F. products and no longer stock “fresh” Foie Gras.   We believe that the quality of this product is unrivalled in flavor, quality, & consistency by anything else available in the United States.  Our ‘Restauration Extra’ lobe is the result of demand from Chef Joël Robuchon to provide a foie superior to what had been available on the market for his Las Vegas restaurant at the MGM Grand. The process of producing this particular foie, though far too complex to cover in great depth here, essentially consists of using liquid nitrogen at -55° F to instantly freeze the liver immediately following evisceration therby complete halting the enzymatic decay of the fat cells.  The result is a foie that, once thawed, is actually “fresher than fresh” foie gras.

 

Rougié is the worldwide leader in foie gras production and rears only mullard ducks, which is a hybrid between the Peking and the Muscovy duck. All the ducks on Rougiés farm are fed with a mix that is composed exclusively of corn and water. They do not eat any animal fat or by-products, nor are they given any antibiotics or hormones.  Even though Rougié produces foie gras on a large scale, some aspects of production have been preserved over the years. This combination of technology & tradition ensure consistent quality and unsurpassed flavor.
